Colby Jack cheese or also known as Kombo, is a blend of both colby and monterey jack cheese. These two cheeses are marbled together to form a deep orange and smooth creamy colored cheese. As a result of the smooth versatile flavor of this cheese it is commonly used in cheese trays, in salads, in casseroles and on sandwiches.
